Cheesy Vegetable Roti

The “Short Eat” shops are incomplete without the classic triangular Vegetable Roti. It’s the perfect grab-and-go snack. Today, I’m adding a little personal twist—a bit of melted cheese inside to make it even more indulgent!


Ingredients

  • Godamba Roti skins (or spring roll pastry for a shortcut)

  • A spicy filling of boiled potatoes, carrots, leeks, and onions

  • Chili flakes, black pepper, and salt

  • A few slices of cheddar or spicy cheese


Method

  1. Prepare the filling by sautéing the veggies with spices.

  2. Place a spoonful of filling and a small piece of cheese on a strip of roti dough.

  3. Fold into a neat triangle shape.

  4. Toast on a flat griddle (thawa) with a tiny bit of oil until all sides are golden and the cheese inside is gooey.

 Make sure to toast the edges of the triangle by standing them up on the pan; nobody likes a doughy edge!
