For the dough: 1 cup Green Gram flour (roasted), 1 cup Rice flour (roasted), 1 cup Kithul Treacle.

For the batter: 1/2 cup Rice flour, 1/4 cup thick Coconut milk, a pinch of turmeric, and salt.

Coconut oil for frying.
Method

Heat the treacle until it thickens. Gradually mix in the roasted green gram flour and rice flour to form a thick, moldable dough.

Flatten the dough onto a board and cut it into diamond shapes.

In a separate bowl, mix the rice flour, coconut milk, turmeric, and salt to create a thick, bright yellow dipping batter.

Dip each diamond into the yellow batter, ensuring it is fully coated.

Deep fry in hot oil until the outer coating is crispy and golden yellow.
For the best flavor, buy whole green gram (mung eta), dry roast them in a pan until fragrant, and then grind them into powder yourself rather than buying store-bought flour!
